Baked Avocado Recipe - Flok Life

INGREDIENTS

The bits you need: 

Serves 2

Prep Time 10 mins

2 Avocados

4 Eggs

1 Spring Onion (thinly sliced)

1 tsp Sesame Seeds

1/2 tsp Dried Chilli Flakes

1/2 Lime

Salt & Pepper

The method:

1. Preheat the oven to gas mark 7, 220 C, fan 200 C

2. Halve the avocados and remove the stones, then scoop out some of the avocado flesh to make room for the eggs.

3. Crack an egg into each avocado half and season with the salt and pepper if you like.

4. Bake the avocados for 10 – 15 minutes until the egg white has set but the yolk is still runny.

5. When cooked squeeze over the lime juice and top with the sliced spring onion, chilli flakes and sesame seeds and serve.
